Lemony Roasted Veggies

Super simple, colorful side dish.

Ingredients

Main ingredients

  • 2 red peppers, sliced into strips

  • 8 ounces mushrooms, sliced

  • 2 leeks, trimmed to just the white and light green parts, cleaned and sliced into 1/2-inch slices

  • 1 lemon, thinly sliced

Directions

Prepare the Lemony Roasted Veggies

1.

Preheat the oven to 425 degrees Fahrenheit.

2.

Lay the peppers, mushrooms, and leeks in a single layer on a greased baking sheet. Drizzle on the olive oil, salt, and pepper.

3.

Spread out the lemon slices over the veggies.

4.

Roast for 30 minutes.
