Diets I absolutely love the taste of coffee! A coffee-flavored muffin is definitely at the top of my list of favorite baked goods, though most versions have way too much oil and sugar for my liking. Because coffee adds flavor without calories, you won’t be able to tell that this richly satisfying treat is low in fat (1/4 tablespoon oil per muffin), low in sugar (less than two teaspoons in each muffin), and 100 percent whole wheat!
2 eggs plus 2 egg whites
1/4 cup oil
3/4 cup Manischewitz Honey
1/2 cup sugar (or Xylitol)
1 and 1/2 teaspoons vanilla extract
1/2 cup soy milk
1 and 1/2 tablespoons coffee, dissolved in 1/4 cup warm water
1 and 1/2 teaspoons baking powder
1 cup Glicks Chocolate Chips (I use sugar-free)
Preheat oven to 350 degrees Fahrenheit. Spray a muffin pan with nonstick cooking spray.
In a large bowl, combine eggs, whites, oil, honey, and sugar. Mix. Add remaining ingredients and mix again to combine well.
Fill muffin cups three-fourths full with batter. Bake for 22 to 25 minutes.
Yield: 16 muffins

how can i make this recipe for a regular 12 muffin tin
It looks like this recipe will make 16 regular sized muffins.
