Macerated Fruit Salad with Crunch

Use your favorite fruits or whatever is in season to personalize this recipe!   Yield: 1 large trifle or 10-12 individual servings

Ingredients

Fruit

  • 1/2 melon, peeled and diced

  • 1 pint strawberries, diced

  • 20 grapes, halved

  • 2 kiwis, peeled and diced

Crunch

  • 1 sleeve graham crackers, crumbled

  • 2 tablespoons brown sugar

  • 1 cup ground coconut

  • 1/2 teaspoon salt

  • 1/4 cup oil

Directions

Macerate

1.

In a large bowl, combine fruits, sugar, and lemon juice.

Let sit between 30 minutes and two hours. Transfer to a large trifle bowl or individual serving cups.

Notes:

To macerate your fruit, add a bit of sugar and acid. This draws out the natural sweetness and juices, creating a syrup which becomes a natural marinade.

Prepare the Crunch

1.

Meanwhile, prepare the crunch. Preheat oven to 350 degrees Fahrenheit. In a baking pan, combine graham crackers, brown sugar, coconut, salt, and oil.

2.

Bake for 20 minutes or until golden. Let cool.

To Serve

1.

Sprinkle crunch over fruit just before serving.

The pictures shows pomegranates but the recipe calls for strawberries which one do you do? Can i do any fruits i like?

You can definitely use any fruit that you like!
