You wouldn’t believe how simple to prepare this amazing-tasting dinner is. Don’t be deterred by the bourbon; you can use a small sample bottle like those given for mishloach manos if you don’t want to purchase a large one. Go ahead and give it a try; you’ll be happy you did!
2 tablespoons margarine
2 tablespoons ketchup
4 tablespoons Gefen Pure Maple Syrup
3 tablespoons Boondocks or other bourbon
1/2 teaspoon liquid smoke
1 tablespoon apple cider vinegar
1 teaspoon paprika
salt, for seasoning
pepper, for seasoning
2–3 tablespoons water, or more as needed
10 chicken drumsticks, cleaned and rinsed
2–3 large sweet potatoes, peeled and cut into thick wedges or rounds
Heat margarine in a large, deep frying pan.
Add ketchup, maple syrup, bourbon, liquid smoke, vinegar, and seasonings, along with two tablespoons water. Stir to combine while bringing to a boil.
Place chicken into pan and bring to a low boil. Cover pan and simmer for 45 minutes, turning every so often, to allow the sauce to coat the chicken. Place sweet potatoes into pan and turn to coat with sauce. Add additional water by the tablespoonful, if necessary, and continue to simmer, covered, for approximately 45 minutes, or until chicken is very soft.
Uncover, turn chicken and sweet potatoes again, and simmer until sauce thickens and coats chicken with a thick glaze. Serve hot.
