5 potatoes, peeled and shredded
1 onion, grated
5 eggs, beaten
1 tablespoon salt
pepper, to taste
1 pound ground beef
4 tablespoons flour
oil, for frying
1/2 cup of mayonnaise
2 tablespoons mustard
2 tablespoons of honey
1 tablespoon of lemon juice
In a large bowl combine all the ingredients in the following order: eggs, potatoes, onion, salt, pepper, ground beef, flour. Mix together.
In a large frying pan over medium-high heat, heat the oil until hot. Place large scoops of the latke mixture into the hot oil, pressing down on them to form 1/2-inch thick patties. Fry for approximately four minutes, turn over and repeat.
In a small bowl, whisk together in the following order: mayonnaise, mustard, honey, and lemon juice.
Drizzle on top of potato latkes, and serve hot.
