light fluffy pretzel style for brunch
1 Tbsp dry yeast
5 Tbsp sugar
1 1/2 cup warm water (orange juice for mezonos)
2 Tbsp oil
1/2 tsp salt
5 cups white spelt flour
boiling water
1 Tbsp baking powder
1 egg whisked for finishing
dissolve yeast, sugar and water/on in bowl of electric mixer
allow to sit for 10 min to activate
on low speed add oil salt and flour, mix for 10 min
transfer dough to greased bowl, cover with plastic wrap
allow to rise for 30 min
preheat oven to 175 C
devide dough I to 24mini/ 12large rolls
rinse bowl, add hot watter and baking spada
drop rolls into water and boil for 2 min
remove from pot, allow to rest 10 min
brush with egg
bake 20 min / until golden
