I can confidently say I make the best candied pastrami ever. My original recipe calls for the pastrami to be dehydrated for many hours, so here’s a quick-and-easy, delicious mock version.
2 6-ounce (170-gram) packages sliced pastrami
1/2 cup light brown sugar
2 tablespoons Glicks Soy Sauce
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
Spray two baking sheets with cooking spray and place the pastrami on them in a single layer.
Mix the brown sugar and soy sauce in a small bowl until you get a wet, sand-like consistency.
Using a pastry brush (or your hands), spread the brown sugar mixture evenly over the pastrami.
Bake for 10 minutes. Remove from the oven, flip the pieces of pastrami carefully with a spatula, and return the pan to the oven for another three to five minutes.
Remove from the oven and allow to cool slightly.
