Presentation is everything! The next time you serve potatoes, try shaping them to look like mushrooms. All you need is a simple apple corer and a sharp knife.
40 small red potatoes (each approximately the size of an egg)
oil
paprika
salt
parsley flakes
To shape the “mushroom stem,” stick an apple corer halfway through an unpeeled potato. While corer is still in potato, cut away (with sharp knife) half of potato around corer. Remove corer leaving “stem” on the potato. Immediately place and keep potato in water to prevent browning.
When all potatoes have been shaped, remove them from water. Sprinkle with oil and seasonings.
Place in a large roaster pan. Cover tightly and bake for 45 minutes or until done.
Preheat oven to 400 degrees Fahrenheit. Wash potatoes well (with a brush).
