At a time when I was on a super tight budget and could not afford to buy checked greens, I learned that sprouts and shoots need not be examined for insects. That’s when I started making and using alfalfa sprouts, pea shoots, radish shoots, etc. The vegetables in this salad are inexpensive yet colorful and flavorful. I enjoyed experimenting with cheaper options from the produce department and some of the recipes I created in that financially challenging time have become family favorites! I urge others who need to budget to try out new foods with items they can afford, no need to stick to broccoli salad, asparagus soup, creamed spinach… My kids love the sweet tang of the candied ginger in the salad and I found that a container of dried ginger lasts far longer than a container of dried cranberries, at least in my house 🙂
3 cups or 1 container pea shoots
6 small red radishes, shaved
2 small kohlrabi, peeled and diced
1 orange or yellow pepper, diced or 6 mini peppers, sliced
10 pieces candied ginger, sliced
1/2 cup cashews, toasted
1/3 c olive oil
juice of 1 and 1/2 Meyer lemons, or 1/2 orange and 1/2 lemon
1 tablespoon honey
1/2 teaspoon celery seeds
salt and pepper, freshly ground over salad
Arrange veggies and top with candied ginger and nuts. Blend dressing ingredients well and drizzle over salad just before serving. In a pinch, any store- bought dressing will go well over this salad.
