Nacho Guacamole Salad with Salsa-Cream Cheese Dressing and Cheese Croutons

If nachos and guacamole are your favorites, then go ahead and try this one. You won’t be disappointed. Even the picky hubby licked his plate clean. (He was taste testing, of course.)
Directions
Prepare the Cheese Croutons
1. Cut string cheese into one-inch cubes. Dredge in flour, then egg, then crumbs. Freeze for one hour.
Prepare the Salad
1. To assemble salad, add lettuce, tomatoes, onion, tortilla chips, and avocado to a large salad bowl.
2. To make dressing, combine cream cheese, salsa, and water. Thin with additional water, if needed. Pour dressing over salad.
3. Fry cheese croutons in two inches of hot oil for two minutes per side. Add to salad. Serve immediately.
