Cream together: /4 cup oil, 1 cup sugar. Then add: 2 eggs, mix until very creamy. Then add: 4 cups flour, 2 tsp baking powder, ½ tsp salt, ¼ cup orange juice, zest of 1 orange (optional), 2 tsp lemon juice, 1 tsp vanilla. Roll, fill, and shape into hamantaschen. Bake at 350°F (175°C) for 15 minutes.
