Diets Soft and sweet, this is an easy baked potato side dish. We won’t claim it’s dietetic, but your kids are sure to love it.
2 ounces margarine
1 cup orange juice
1/2 teaspoon grated orange rind
1/2 teaspoon salt
1 cup sugar
6 medium sweet potatoes, cut into 1/4 inch slices
1 cup water
Preheat oven to 350 degrees Fahrenheit. Arrange sweet potatoes in greased nine- by 13-inch pan.
In small saucepan, bring remaining ingredients to boil, cooking until sugar is dissolved. Pour over sweet potatoes.
Cover and bake at 350 degrees Fahrenheit for one hour or until sweet potatoes are tender. Baste occasionally. Uncover for last 10 minutes.
