1 box ? frozen spinach or 2 (9 oz) bags of spinach, blanched
3/4 c water
2 tbsp olive oil
4 shallots, minced
2 tbsp minced fresh ginger
2 tbsp butter
1 tbsp chili paste
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp garam masala
1/2 tsp chili powder
1/2 tsp kosher salt
2 cups cubed paneer
1/2 cup heavy cream
1/2 tomato for serving
Purée spinach in blender with water. Heat oil in a sauté pan over medium high heat. Add shallots, garlic and ginger and cook over high heat for about 2 minutes. Add paneer and gently toss to coat. Cook another 2 minutes. Add heavy cream and cook another 2 minutes.
variation: can use full fat coconut cream instead of heavy cream
