Did you know you can use avocado instead of margarine or oil in baking? It’s a perfect 1:1 ratio. Sounds simple enough? It is! Replace one cup margarine or oil with one medium soft, creamy avocado.
Yield: 15–18
1 cup plus 2 tablespoons gluten-free flour, such as Gefen Almond Flour or any other type (see tip)
1/4 teaspoon Gefen Salt
1/2 cup mashed avocado (from about 1/2 medium avocado)
1/2 cup sugar
1 egg
3/4 cup Haddar Chocolate Chips (optional)
Preheat oven to 325 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside.
In a bowl, combine flour and salt.
In a separate bowl, cream together avocado and sugar until light and fluffy. Add egg and beat until smooth.
Add flour to the avocado mixture and mix well. Add chocolate chips (if using) and mix with a spoon.
Drop spoonfuls of batter onto the prepared baking sheet.
Bake nine to 10 minutes, until lightly browned. Remove from oven and let cool fully before serving.
