store-bought beef patties, or your favorite burger recipe made into patties
Chickies Onion Bloom Dressing
duck fry
shallot
shot glass
short wooden sticks (don’t use toothpicks)
Dice the duck fry and shallot and sauté.
Using the shot glass, punch a hole out of the patties to form into donut shape.
Round out the punched out donut hole into a ball and stick the wooden stick in to form a lolly (you can also buy beef lollies if your grocery store/butcher carries them).
Fry the patties and donut holes until cooked.
Drizzle on the onion bloom dressing on half the “donut.”
Sprinkle the duck fry and shallot onto the dressing.
You can also use crunchy fried onions, hot pastrami, or any other of your favorite toppings.
