Directions

Prepare the Soup

1. In an eight-quart pot, sauté onions in oil until transparent. Add carrots and celery and continue sautéing for five minutes.
2. Add remaining ingredients. Cook for two to three hours.

Tips:

To reduce cooking time, boil split peas for one minute and allow to stand for two hours before proceeding.

Variations:

Omit split peas and increase barley to 1 cup.
