Ingredients

Pickle Eggplant dip

  • eggplant

  • Oil

  • gherkins (or Israeli pickles)

  • garlic (fresh or frozen)

  • parsley

  • techina

  • (fresh) lemon juice

  • s&p

  • maybe some cumin

Directions

Slice eggplant and salt it

Let sit (15-20 min?) and pat dry

3.

Chop into cubes

Place on sheet tray

Add lots of oil

6.

Roast on 375 until golden brown

Mix with eggplant and add techina, (fresh) lemon juice, s&p, maybe some cumin
