Shabbos dip
eggplant
Oil
gherkins (or Israeli pickles)
garlic (fresh or frozen)
parsley
techina
(fresh) lemon juice
s&p
maybe some cumin
Slice eggplant and salt it
Let sit (15-20 min?) and pat dry
Chop into cubes
Place on sheet tray
Add lots of oil
Roast on 375 until golden brown
Chop:
gherkins (or Israeli pickles)
garlic (fresh or frozen)
parsley
Mix with eggplant and add techina, (fresh) lemon juice, s&p, maybe some cumin
Measurements according to taste
