Diets This is perfect for a full and filling breakfast/ lunch. I sometimes make it motzei Shabbos as well. It’s delicious and very adaptable- you can change the filling to your taste, add onions or mushrooms ( we don’t go for those here!) or ketchup instead of tomato sauce.
The ingredients are for one serving.
2 to 3 eggs
1/2 orange/ yellow pepper
shredded cheese
salt
pepper
onion powder
Chop the peppers and sauté in oil and spices. Set aside in a bowl.
Whisk the eggs and fry as an omelet, both sides. Turn off the flame.
Add the peppers onto one half of the omelet, with some shredded cheese. Fold over, spoon some tomato sauce on top and cover with more shredded cheese.
Cover pan and let cook another minute, or transfer it into the (milchig) toaster oven while you prepare the next one!
