Pitas are great travelers as the bread encloses its filling safely and neatly. They can be warmed or toasted, split open, and stuffed with many different fillings and vegetables for a complete meal. These pizza-flavored pitas are delicious even when cold. The vegetable and cheese mixture can be prepared well in advance. If you double the recipe, the ready pizza pitas can be frozen and rewarmed for a quick breakfast or lunch! For the Adults: Load these up with more veggies!
2 whole wheat pita or 12 mini pitas, halved
1 and 1/3 cups diced vegetables (zucchini, bell peppers, broccoli, celery, mushrooms, green beans etc.)
1 cup shredded mozzarella or pizza cheese
1/2 cup Gefen Pizza Sauce or tomato sauce
Preheat oven to 350 degrees Fahrenheit.
Combine all ingredients and stuff into pocket halves. Place on baking sheet and bake for eight to 10 minutes, or until pita is toasty and cheese is bubbling.
Yield: 2 sandwiches or 12 mini sandwiches
