A classic.
3 eggs
1-2 tablespoons salt
7 large potatoes, peeled
1 large onion, peeled
1/4 cup oil
Process potatoes and onions in food processor fitted with the shredder blade. Transfer to a large mixing bowl.
Add oil, eggs, and salt and mix well. The mixture should taste salty.
Place in oiled 8×8 glass baking dish.
Bake at 400 degrees Fahrenheit for an hour, or until browned on top.
