Put up a pot with a lot of water and LOTS of salt to boil, add in cubed potatoes and cook for 15 minutes. Preheat oven to 425 degrees Fahrenheit and line two cookie sheets. Carefully (they smash easily) place them on the cookie sheet. Taste one to see if it needs more salt – if yes, add more – then sprinkle on parsley flakes and garlic powder and oil and bake for 40 minutes or until well baked.
Or easier, and faster I spray (regular oil in a spray NOT oil spray) Betty Crocker with oil and add potatoes (see note) then I spice with: 1- Thyme (or any other herb you enjoy) Salt and about 2 garlic cubes or garlic powder (I’ve tried it both ways and they’re both good). 2- (This I like even better. It tastes like the potatoes you buy in the pizza store – I make it weekly for breakfast.) Season generously with salt, a little less garlic powder, onion powder and paprika and a dash black and white pepper.
Mix them every few minutes (add more oil if necessary – I always add) until golden, about 20 minutes.
