2 eggplants, sliced and sprinkled with salt
green olives
vinegar
soy sauce
parsley
Roast your eggplant for about 20 minutes in an oven set to 475 degrees Fahrenheit.
After, cube your eggplants and place them in a bowl.
Roast some olives for about five minutes for delicious results.
Mix the dressing in a bowl with a tablespoon or more of vinegar, soy sauce, and some parsley.
Plate and enjoy. This is perfect to make for Shabbos!
