1. for the sweet potatoes:
2. dice the sweet potatoes and toss with desired amounts of olive oil, salt, and pepper. spread on a metal cookie sheet and bake on 450 for 20 minutes.
3. for the chickpeas:
4. heat oil, and add in chickpeas. add in spices and sauté for 4 minutes.
5. for the oil dressing:
6. combine all ingredients in a container and shake it up.
7. for the Mayo dressing:
8. mix all ingredients together.
