Would you believe this meal requires only a handful of ingredients and a couple of minutes in your kitchen!? Using the oven to make a quick supper while minimizing dishes is the way to go.
4 pounds chicken wings
2 tablespoons olive oil
spices such as onion powder, garlic powder, and paprika, if using unflavored bread crumbs
oil spray, such as Glicks
6 medium Yukon gold potatoes, washed and diced
3 tablespoons oil
2 teaspoons Gefen Onion Powder
1 teaspoon Gefen Garlic Powder
1 and 1/2 teaspoons salt
2 pounds baby carrots
1 tablespoon olive oil
2 teaspoons granulated garlic powder
2 teaspoons dried parsley, such as Gefen
1/2 teaspoon salt
Preheat oven to 400 degrees Fahrenheit.
Place the wings onto a metal baking sheet lined with Gefen Parchment Paper. Drizzle on the olive oil and mix to coat. Shake some of the bread crumbs over the top of the chicken wings. Shake on spices here if using. Toss the wings with the bread crumbs. Add more crumbs till coated well, pressing the wings into the crumbs on the pan. (You won’t need to use the entire bag of bread crumbs, just keep shaking on until they are coated nicely.)
Spray the tops well with oil spray.
Bake for 40 minutes, uncovered, until crispy.
Mix together in a baking dish and bake covered at 400 degrees Fahrenheit for one to one and a half hours.
Remove and mash with a fork. Place back into oven covered for another 10 minutes if needed. This will develop the flavor a bit more, but it’s optional.
Mix together on a baking sheet lined with parchment paper.
Bake uncovered at 400 degrees Fahrenheit for 30 to 40 minutes or until fork tender.

It could be the potatoes just needed more time to cook. That should do the trick. You want them super soft. Glad you liked the wings!
