Submitted by Shoshana Beyda Simple yet elegant: the most versatile poultry taken to a whole new level.
2 onions, sliced in half rounds
8 chicken pieces (I used thighs)
3 sweet potatoes, cut in large pieces
3 potatoes, cut in large pieces
1/3 cup roasted slivered almonds
1/2 cup duck sauce
spices to taste: garlic powder, salt, paprika, black pepper
1/2 cup silan
Sauté onions till brown.
Add almonds and sauté 2 more minutes.
Arrange potatoes in pan or roaster.
Rub duck sauce on chicken and potatoes.
Arrange onions and almonds on chicken and potatoes.
Sprinkle spices evenly.
Drizzle silan evenly.
Cover and bake at 350F for 2 hours.
Optional: to caramelize potatoes further, remove chicken and cook potatoes for additional 30 minutes.
