Diets Big, fluffy, and perfect for Rosh Hashana. These cookies bring a bunch of simanim together in one bite: soft honey cookie made with applesauce, stuffed with dates, and drizzled with a pomegranate glaze.
Sweet, festive, and filled with meaning for the new year.
Makes 11 big cookies
1/4 cup coconut oil
1/4 cup unsweetened applesauce
1/2 cup Gefen Honey
1 egg
1 teaspoon vanilla
2 and 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Beleaves Dates (stuffed inside or placed on top)
confectioners’ sugar + Tuscanini Pomegranate Juice (mixed until drizzly), for glaze
Mix all the batter ingredients together. Form dough balls and either stuff with half a date inside or place a piece of date on top.
Bake at 350 degrees Fahrenheit for 12–15 minutes.
After cookies are completely cooled, mix confectioners’ sugar with pomegranate juice until drizzly and pour over cooled cookies.
