1 pound ground beef
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
3/4 cup tomato sauce
1/2 cup ketchup
1 teaspoon onion soup mix
1 tablespoon brown sugar
salt, to taste
pepper, to taste
3 potatoes
1 eggplant
5 eggs, divided
1/2 cup flour
salt
pepper
oil, for frying
Combine ground beef, onions, peppers in large skillet, sauté for 15 minutes, stirring frequently.
Add remaining ingredients and bring to a boil, cook covered over medium heat for 20 minutes, stirring occasionally.
Heat oil in frying pan.
Peel and cut eggplant into 1/4 inch slices, coat each slice in flour, dip into two beaten eggs.
In a separate bowl, grate potatoes, drain liquid mix in three eggs, salt and pepper.
Place eggplant in hot oil, turn over after one minute and place a scoop of potato mixture on top, fry for another minute turning it over once again making sure that the latke fries properly.
Using the latke as the “bun” place sloppy joe mixture between two latkes. Hearty appetite!
