Diets This sophisticated version of mac ’n cheese could not have come together more quickly and easily! I included an option to add some pizza sauce, but I personally enjoyed it more without.
4 cups water
2 packages ramen noodles, imitation chicken flavor
4 tablespoons butter
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
3/4 cup heavy cream
3 cups chopped fresh or frozen spinach
1 cup shredded mozzarella cheese
2 slices American cheese
1/2 cup Tuscanini Pizza Sauce (optional)
Parmesan cheese, for sprinkling
Bring water to a boil in a large pot. Place noodles into boiling water and cook for three to four minutes, stirring once or twice to break them up. Reserve the spice packets. Drain noodles and set aside.
In the same pot over medium heat, add four tablespoons butter and the minced garlic. Sauté garlic until fragrant and lightly browned. Pour in the heavy cream, the seasoning packets, and the chopped spinach and bring to a slight simmer. Add the mozzarella and American cheeses and stir gently until melted.
Pour in the prepared noodles and pizza sauce, if using, and mix well until combined. Transfer to a serving dish and top with grated Parmesan cheese. Serve immediately.
