A cooling summer salad with the right amount of sweet.

Ingredients

Salad

  • 4 cups arugula and spinach

  • 1 cucumber, julienned into noodles until the seeds

  • 1-2 hard peaches or nectarines, julienned

  • 1 cup snap peas

  • 1 bunch mint, finely diced

  • 1/2 fennel, shaved with peeler or a julienne peeler

  • 1/2 cup almonds

Dressing

  • salt

  • pepper

Directions

Prepare the Salad

1.

Combine salad ingredients, dressing ingredients, combine and serve!
