Squash Broccoli Soup

Ingredients

Squash Broccoli Soup

  • 1 onion, roughly chopped

  • 8 cloves garlic

  • 4 squash, roughly chopped

  • 1 bag frozen broccoli

  • 2 potatoes, roughly chopped

  • 1 jalapeño

  • salt

  • black pepper

  • garlic powder

  • onion powder

  • onion soup mix

  • vegetable stock

  • water

Directions

1.

In an eight-quart pot, sauté the onion and garlic. Let it sauté for a good 20 minutes, then add the squash and the broccoli and let it sauté for about 10 minutes.

2.

Then add the potatoes and the jalapeño. Add the vegetable stock to fill up half of the pot.

3.

Add water until 3/4 of the pot is filled.

Add the spices.

5.

Simmer 45–60 minutes, uncovered or partially covered. Blend.
