FOR ASSEMBLY
12(6 oz.) glasses
12 pipettes
CAKE
6 eggs
1 cup WonderMills flour
1 cup sugar
2 T. oil
2 T. orange juice
1tsp. baking powder
1 tsp. vanilla sugar
CHEESE FILLING
16 oz. heavy cream
8oz. whipped cream cheese
1 cup confectioners’ sugar
(16 oz.) package frozen strawberries
STRAWBERRY SAUCE
1/2 cup frozen strawberries
1/4 cup confectioners’ sugar
1 T. orange juice
DIRECTIONS
1. For the cake, beat together the sugar and eggs for approximately 5 minutes.
2. Add the rest of the ingredients except the flour, and mix. Add the flour and mix again.
3. Pour the batter onto a lined cookie sheet, and bake at 350″ for 20 to 25 minutes. Cool
4. For the cheese filling, whip the heavy cream at medium speed for to 2 minutes until soft peaks form Do not overmix
5. In a separate bowl, blend together the cream cheese and confectioners’ sugar.
6. Fold the cheese mixture into the heavy cream, scraping the sides as necessary.
7. To assemble, use one of the glass cups or around cookie cutter to cut 12 circles from the cake
8. Place each cake round in a cup, pressing the cake down to the bottom
9. Stand the strawberries hull-side down, and cut them into le-inch thick slices (The smaller slices will be used in the center of the cups, where they will not be visibile)
10. Press large strawberry slices around the inside of the glass Repeat this step with all the cups
11. Chop the smaller strawberry pieces, and place them on the cake in the center of the glass, where they won’t be visible.
12. Pipe some cheese mixture into the center of each glass until they’re three-quarters full
13. Decorate the cups with fruit
14. For the strawberry sauce, blend together the frozen strawberries, confectioners’ sugar and orange juice until smooth
15. Place an open end of a pipettes into the sauce and gently squeeze out the air, then release the pipettes gently to it with sauce Repeat this with all the pipettes
16. Decorate the tops with pipettes
