Submitted by Leah Weinrib I was looking for something different and created this recipe that was simple, tasty, and looked very appealing.
1 box rice pilaf (any flavor)
1 lb chicken breast
1 acorn squash
Olive oil
Preheat oven to 350F.
Cut the acorn squash in half. Take out the seeds.
Place both halves of the squash on a lined cookie sheet. Drizzle with olive oil and bake for 30 minutes or until it is soft enough to poke with a fork.
Meanwhile, prepare rice pilaf as directed on the box.
Cut the chicken breast into strips (you can also use leftover Shabbos chicken).
Pan sear the chicken for 2-3 minutes on each side.
Once the acorn squash is soft enough to poke, mix together chicken and rice mixture. Divide into two and fill the acorn squash.
Bake for an additional 10 minutes so the squash gets the flavor or the rice/chicken mixture.
