Summer Mojito Salad

Ingredients

Salad

  • spinach

  • raspberries

  • nectarines

  • apricots

  • fresh mint

  • chili lime pumpkin seeds (recipe follows)

  • slivered almonds

Chili Lime Pumpkin Seeds

  • pumpkin seeds

  • oil

  • chili lime seasoning

Dressing

  • 1 clove garlic

  • 1/2 teaspoon salt

  • freshly ground Gefen Pepper

Directions

Prepare the Salad

1.

Blend all dressing ingredients in a blender.

2.

To make pumpkin seeds, fry pumpkin seeds in a pan with a bit of oil and chili lime seasoning.

3.

Combine all salad ingredients. Top with dressing and enjoy!

Notes:

Per the recommendation of the OU, raspberries must be inspected individually over a white cloth or lightbox. If insects are found, none of the berries in the container may be used.
