Sunchoke Salad

Jerusalem Artichoke A.K.A. the Sunchoke, is a veggie lots of people don't know much about. They are a nutty, subtly sweet and tasty root vegetable that resembles ginger in looks.

You can prepare sunchokes in a variety of ways, including roasting, sauteing, pureeing in soups or slicing them up in a salad like i did!

Prepare the Salad

  1. Start with washing and chopping your salad vegetables.
  2. Toss the vegetables in a bowl
  3. For the dressing, put the garlic, lemon juice, dill, olive oil, scallions and mayonnaise in the blender.
  4. Add water according to your preferred thickness. Add salt for flavoring.
  5. Blend until smooth. Enjoy.
