Sweet and Sour Cabbage Soup

It’s all about moderation.

 

A “sweet”-and-sour soup like this does contain sugar. But look at the yield and the rest of the ingredients. A half-cup in a huge pot like this will yield only two teaspoons per bowl...and the other ingredients are almost calorie-free.

Start Cooking

Prepare the Soup

  1. Heat oil in a large soup pot over medium heat. Add onion and sauté until soft. Add garlic, zucchini, and coleslaw mix. Cook until vegetables are soft, about 10 minutes.

  2. Add water, tomato sauce, ketchup, vinegar, brown sugar, and seasonings. Bring to a boil. Stir in cornstarch.

  3. Let simmer for one to one and a half hours.

    My husband and young kids loved this. It’s also healthy and different and all that makes this recipe a winner for me. It is a little hot (‘hot’ as in spicy) but that didn’t seem to matter to my family.

    Is there a strong sour taste that may make this not such a kid friendly soup

    It all depends on your tastebuds, however it is not like a lemon sour. The sourness comes from the tomatoes and vinegar but there is brown sugar to balance it out. Hope this helps!
