Sweet and Tangy Veggies

Ingredients

Dressing

  • 5 tbsp balsamic vinegar

  • 3 tbsp olive oil

  • salt and pepper to taste

  • 1/2 tbsp dried dill

  • 1/2 tbsp dried parsley

  • 5 tbsp honey

Sweet and tangy veggies

  • 3 sweet potatoes, peeled and cut into long wedges  

  • 1 cup carrot batons

  • 1 green and 1 yellow pepper, sliced

Directions

Prepare the Sweet and Tangy Veggies

1.

Combine all dressing ingredients in a bowl and mix well.

2.

Put vegetables in the bowl and coat well.

3.

Spread onto a lined baking sheet and bake on 215° c for 20 mins or till sweet potatoes are soft.
