2 sweet potatoes
4 Yukon gold potatoes
4 eggs
salt
pepper
red pepper flakes
Grate sweet potatoes into one bowl.
Grate regular potatoes into another bowl.
Add two eggs to each mixture.
Add red pepper flakes, salt, and pepper to the regular potato mixture.
Add salt and pepper to the sweet potato mixture. Keep each mixture separate.
Heat oil in frying pan.
Place a spoonful of sweet potato mixture and a spoonful of regular potato mixture side by side, creating a latke that is half sweet potato and half regular potato.
Fry a few minutes on each side until cooked through.
Drain on paper towels.
