  • 3 cups flour

  • 1 tablespoon baking powder

  • 4 eggs

  • 1 3/4 cups sugar

  • 1 cup oil

  • 1 tablespoons vanilla extract

  • 2 tablespoons orange juice

  • for mocha swirl

  • 3 tablespoons batter

  • 2 teaspoon coffee

  • 2 tablespoon

  • 2 tablespoons boiling water

  • stredle topping

  • 1/4cup oil

  • 1 cup flour

  • 1/2 sugar

step1: line 16 muffins holders with muffin paper cups; if using a disposable muffin tin, spray with cooking spray. preheat oven to 350f

step2:combine all better ingredients in a medium bowl using a hand Blender. set aside 3 tablespoons for a mocha swirl. fill muffin half full.

step3: mix coffee with sugar and boiling water until dissolved. add reserved better and mix well. swirl ah heaping teaspoon of mocha swirl into each muffin

step4:in a separate bowl mix the streusel incidence until they form coarse crumbs. sprinkle on top
