Diets Rich coffee-flavored muffins topped with buttery cream are irresistible! These muffins are so delicious that you’ll want to make them repeatedly!
Yields: 12 muffins
2 eggs
1/2 cup sugar
1/2 cup Haddar Brown Sugar
1 tablespoon vanilla sugar
1/2 cup milk
1 and 1/2 teaspoons baking powder
1/2 teaspoon Elite Coffee dissolved in a drop of hot water
1/2 cup melted butter
1 and 1/2 cups cake flour
4 tablespoons hot water
2 tablespoons Elite Coffee
2 tablespoons sugar
1 stick butter, at room temperature
1 8 ounce whipped cream cheese
1 teaspoon vanilla sugar
Gefen Cocoa, for dusting

Preheat the oven to 350 degrees Fahrenheit.
Start by melting the butter.
In a mixing bowl, combine all the muffin ingredients until the mixture is well combined and smooth.
Pour the batter into muffin pans or oven-safe loaf molds. If you’re not using liners, be sure to spray the pans well with cooking spray.
Bake for 25-30 minutes. Once done, remove the muffins from the pan and let them cool.
In a small bowl, mix together the coffee, sugar, and hot water until well combined.
While the muffins are still warm, but not hot, poke holes in each muffin so they can absorb the coffee mixture. Then, slowly pour a small amount of the liquid coffee into each muffin.
In a separate bowl, beat the butter and cream cheese until creamy.
Gradually add the confectioners’ sugar and vanilla, mixing until well combined and the cream is fluffy.
Transfer the butter cream into a piping bag. Pipe the cream onto the top of each muffin.
Dust with cocoa, add a ladyfinger on top, and drizzle with milk chocolate.
