Toasted marshmallow cookies

  • 140gram bag marshmallows

  • 1 cup oil

  • 3/4 cup sugar

  • 1/4 cup brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tsp salt

  • 1 tsp baking soda

  • 2 tbs cornstarch

  • 2 1/2 cups flour

broil marshmallows: line baking sheet with foil spray with cooking oil spread in single layer and broil 2-3 minutes until dark. immediately scrape into bowl then add rest ingredients besides flour. beat on high speed for 2-3 minutes until creamy, turn mixer to low and add flour.

bake for 10 minutes on 175•
