2 T olive oil
1 cup chopped onions
2 tsp chopped garlic
1 pablano pepper, chopped
1 green pepper, chopped
1 jalapeño pepper, chopped
2 carrots, sliced
1 small can diced tomatoes
1 tsp salt
1 1/2 tsp cumin
1/2 tsp coriander
1 T tomato paste
6 cup chicken broth
Heat the olive oil of medium heat
add the onions, garlic, peppers and carrots and sauté for about 5 min
add the spices and sauté another 5 min
add the tomato paste and diced tomatoes and stir for a min
add the broth and bring to simmer
simmer 20 min
