Vegetable Cutlets 2 Ways

These easy vegetable cutlets are packed with nutrients. The veggie blend of your choice is cooked and mashed, then combined with a minimal amount of matzo meal and egg just to bind it all together. Fry, or bake, and dinner is served.

Directions

For the California Mix

1. Combine all ingredients mixing well.

For the Vegetables Mix

1. Peel and cook vegetables in water until tender. Drain.
2. Combine vegetables with remaining ingredients. Blend until smooth.

Prepare the Cutlets

1. Form desired mixture into patties. Fry in oil on both sides until golden.

Variations:

To bake, grease baking pan with four tablespoons oil. Place patties into pan, turn to grease both sides. Bake for 15 minutes on each side.
