Vegetable Cutlets


Make quick, easy vegetable cutlets that taste great and are loaded with high-nutrient vegetables like cauliflower, broccoli, and carrots. Made with only a minimal amount of matzo meal, these cutlets are light on the waist.


Prepare the Cutlets

1. Cook California Blend vegetable mix and potatoes in water until tender. Drain and mash vegetables.
2. Add matzo meal, eggs, and spices. Mix well. Form into patties.
3. Fry on both sides in hot oil until golden brown.
