Bean and Vegetable Soup

This vegetable soup is a total meal-in-one. Beans, split peas, root vegetables, and noodles make this soup a hearty and filling supper.

Directions

1. Place first six ingredients into an eight-quart pot and cook for one and a half hours.
2. In separate pot, sauté vegetables in oil for 30-40 minutes.
3. Combine sautéed vegetables with beans. Cook for half an hour.
4. Add noodles and cook for five minutes. Turn off heat and keep covered for 10 additional minutes.

Freezes very well.
