Veggie Kabobs

These veggie kabobs will add so much to your barbecue. Between the gorgeous colors and the great flavor, this will be a hit with everyone. And eating food off a stick is always fun! If these veggies are not your favorite, feel free to switch it up, using mushrooms, onions, or even cubes of chicken.

Ingredients

Vegetables

  • 3 small zucchini

  • 3 small yellow squash

  • 12 grape tomatoes

Marinade

  • 1 tablespoon brown sugar

  • 1 tablespoon vinegar

  • 1/2 teaspoon salt

  • 1/8 teaspoon black pepper

Directions

Prepare the Veggie Kabobs

1.

Wash squash well, cut diagonally into one inch chunks.

2.

Using metal skewers, thread squash chunks and tomatoes alternately.

3.

Combine all ingredients for marinade. Brush kabobs with marinade.

4.

Place kabobs on grill or pan broil 10-15 minutes. Turn kabobs occasionally and brush with marinade.
