Winter Slaw with Miso Date Vinaigrette

A bag of coleslaw mix is my secret weapon when it comes to weeknight salads. It’s pretty fridge-stable and works well with mostly any toppings. My kids love the sweet crunchy toppings- apples, cucumbers and pomegranate seeds are always a hit!

Ingredients

Salad

  • 1 bag coleslaw mix

  • 1 bag shredded carrots

  • 2 Persian cucumbers

  • pomegranate seeds

  • dried apricots, chopped (sugar-free, if desired)

  • watermelon radish, thinly sliced

  • apple, sliced into matchsticks

  • pine nuts

Dressing

  • pinch of black pepper

  • 1/3 cup extra virgin olive oil

Directions

Prepare the Dressing

1.

Add all ingredients except for oil to a blender. Blend to combine.

2.

Slowly stream in oil and blend until emulsified.

To Serve

1.

Combine all salad ingredients in a large bowl.

2.

Pour dressing over and toss to coat.
