This soup is yum and very filling. It’s a whole meal, and is perfect for a cold winter day!
3 tablespoons oil
1 diced onion
1/2 cup diced celery
3/4 cup diced carrots
1 teaspoon garlic (minced)
1/2 cup shredded cabbage
1 cup cubed zucchini
1 kohlrabi, cubed
1 cup chopped fresh tomatoes
2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon oregano
1 teaspoon basil
1/4 cup parsley flakes
2 cups tomato sauce
4 cups water
1/4 cup wine
1/2 cup macaroni
Heat oil in a large pot.
Add diced onion, celery, and carrots. Sauté for about 10 minutes until softened.
Add garlic and cook for one minute.
Add shredded cabbage, zucchini, kohlrabi, and fresh tomatoes.
Season with salt, black pepper, oregano, basil, and parsley.
Stir in tomato sauce, water, and wine.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Add macaroni and continue cooking for about 15 more minutes, until pasta is tender. Add more water during cooking if needed.
