This is a deliciously warm and comforting yet light and healthy soup. It’s also really simple and quick to make!

Ingredients

  • 3 leeks, sliced

  • 1 medium onion, chopped

  • 5 large zucchini’s, sliced thick and unpeeled

  • 6 frozen garlic cubes

  • Salt and pepper to taste

  • Approximately 7 cups water

Directions

1.

Sauté the leeks and onions in a bit of oil over a medium-low flame until softened

Mix in the frozen garlic cubes

Mix in the zucchini

4.

Season with salt and pepper

5.

Add the water to JUST cover the vegetables

6.

Cook on a low boil for 45 minutes or until the zucchini is soft

7.

Allow to cool, then blend with an immersion blender until smooth
