One-Pot Teriyaki Chicken and Rice

Recipe by Chavi Feldman

Serves 6-8

2 Tbsp oil
4 chicken breasts (about 2½ lb or 1¼ kg), diced into 1½-inch (4-cm)
salt and pepper, to taste
4 cloves garlic, minced
1½ cups water
1 cup white rice, rinsed
¼ tsp dried ginger
¼ cup soy sauce
2 Tbsp rice vinegar
½ cup honey
1½ Tbsp hot sauce (or to taste)
3–4 cups frozen broccoli florets, thawed
1 cup sliced baby carrots
1 red pepper, diced
10 oz (280 g) baby bella mushrooms, cleaned and sliced
3 Tbsp cornstarch roasted and salted cashews, for garnish (optional)

Heat oil in a large pot over medium heat.
Add chicken.
Season with salt and pepper, and sauté for 4–5 minutes, flipping over
during cooking. Add minced garlic and sauté for 2 minutes, until
fragrant. Then add water, rice, ginger, soy sauce, rice vinegar, honey,
and hot sauce, and stir. Cover the pot and bring to a boil. Stir, then
reduce heat to low. Cover and simmer for 10 minutes, stirring
occasionally to prevent sticking.
