4 sheets Manischewitz Matzo, broken into rough pieces
1 tablespoon olive oil
1/2 medium shallot, sliced
1 clove garlic, chopped or 1 cube Gefen Frozen Garlic
1/2 cup feta cheese
2 cups spinach
1 cup cherry tomatoes, halved
1/2 cup parsley, cleaned
sea salt, to taste
pepper, to taste
